The tapioca: very popular and known under the name “Cameroonian Savior”.
Tapioca is a food made from cassava roots that is mixed with red oil (or palm oil) and then dried. Its peculiarity is that it swells (increases in volume) on contact with water. It doesn’t have a special taste, on the border it can be a little sour.
Gari or tapioca in Central Africa is a semolina made from fermented cassava roots, dried, and then processed.
The manufacturing process is medium in size and can take anywhere from two days to several weeks. It’s sometimes white, sometimes yellow depending on whether you added palm oil or not.
Tapioca is known for its satiating property when cold puffed. In Cameroon, for example, it is called “Redeemer” because it is available at a low price, but also because it has the capacity to double its volume after being soaked in cold water.
