African cuisine: couscous cassava or fufu
Cassava flour comes from ground cassava root. It is a compact and elastic dough, prepared with cassava flour, which can be found on tables in all Cameroonian regions, only the accompanying sauces vary.
After fermentation and drying, cassava roots are crushed, sieved and put into bags. Cassava flour is used to cook cassava fufu or “couscous de manioc”. It can replace wheat flour in some donut recipes.
